The ingredients in these recipes can be easily substituted.
Ground beef and chicken – Tofu; Cheese – Soy cheese.
Yellow rice mix – Brown rice with seasoning.
Easy Crunchy Tacos
1 – pkg Tacos
1 lb – ground beef
1 med. Onion chopped
Taco seasoning
1 can Refried beans
½ cup salsa
1-2 tomatoes diced
Dash of salt & pepper
Shredded lettuce
Mexican cheese
Brown ground beef with onion, add taco seasoning as directed and refried beans and salsa. Simmer for 20 minutes. Place in crunch taco shell, add shredded lettuce, diced tomatoes & shredded Mexican cheese. Delicious!
Delicious Yellow Rice with Black Beans
1 pkg. yellow rice mix
1 can black beans
1 small onion
Garlic
Dash of salt, pepper & cumin
Cook the rice as directed. Saute onion & garlic in olive oil, add black beans & seasoning.
Tortilla Chips topped with Chili
1 lb. ground beef
1 small onion
Garlic
1 can diced tomatoes
Chili powder
1 small can of Green chilis
Salt & pepper
Mexican cheese
Green onions, sliced
1 small can of black olives, sliced
This is a simple chili with lots of flavor. Brown your ground beef with onion & garlic. Add tomatoes chili powder and green chilis. Simmer for 30 minutes.
Place tortilla chips in a large flat bowl. Spoon the chili over the chips; add Mexican cheese, green onions, and olives. Everyone will love this dish!
Bad Boy Burritos
Soft tortillas
Grilled chicken breasts - cut up into bite-size pieces
1-2 tomatoes – diced
Shredded lettuce
Mexican cheese
Jalapenos
Heat the tortillas in the microwave for 15 seconds with a wet paper towel on top.
Take the cut up chicken, salt & pepper and place in tortilla, with some tomatoes and lettuce. Add the cheese and reheat to melt the cheese.
