Tangy Shrimp with Roasted Vegetables

Serves 2 -4
Ingredients:

10 lg. shrimp, deveined
1 Zucchini
2 Carrots
1-2 cups Cherry tomatoes
1 Medium red onion
1 Medium red pepper & yellow pepper
Garlic & Herb Salad Dressing Mix
1 Tbsp. - Soy Sauce

 

Preparation:
Mix the Garlic & Herb Salad Dressing according to directions.  Marinade the shrimp in the dressing with soy sauce for 30 minutes.

Cut vegetables into small pieces (bite-size) and place in a shallow baking dish. Drizzle olive oil on top and sprinkle Italian herbs, salt & pepper to taste. Stir to mix it all up. Broil @ 500 degrees for 15-20 minutes. Then broil the (peeled) shrimp for about 5 minutes until they lose their translucent color. Do not overcook.  Put it all together on top of your favorite salad greens with the garlic & herb dressing.  This is so delicious and healthy!


Cucumber Sandwiches

Ingredients:
2 teaspoons mayonnaise

1 tablespoon chives, finely chopped
1/2 teaspoon lemon juice
1 tablespoon vegetable soup mix
1 tablespoon finely chopped dill
30 slices thinly sliced white bread
1 English cucumber, thinly sliced

Preparation:
In a small mixing bowl, combine cream cheese, mayonnaise, chives, lemon juice and vegetable soup mix. Stir to combine thoroughly. To make sandwiches, spread mixture on 2 slices of bread and place 6 to 8 cucumber slices between them. Repeat to make 15 sandwiches. Use a round- shaped biscuit cutter to stamp out sandwich or cut them in triangles.

Arrange sandwiches on serving platter. Sprinkle dill on top of each sandwich on top of each sandwich.
